Divide 1.25 cups of fresh green peas into two batches. Grind one batch coarsely and the other batch finely in a blender. Keep aside.
• Heat 2 tbsp of mustard oil in a pan and fry 3/4 cup of potato cubes until golden. Drain and keep aside.
• In the same oil, add 1 bay leaf, 1 black cardamom, and 1/2 tsp of cumin seeds. Once they splutter, add the ground onion paste (made with 1/2 cup chopped onions, 1/2 tsp chopped ginger, 1 tsp chopped garlic, and 2 green chilies).
• Saute the onion paste until oil releases from the sides and the paste becomes lumpy.
• Add 1/3 cup of finely chopped tomatoes and cook until they become mushy.

• Add 1/4 tsp of turmeric powder, 1/2 tsp of Kashmiri red chili powder, 1/2 tsp of coriander powder, and a pinch of asafoetida. Mix well with the onion-tomato masala.
• Add the finely ground green peas and saute for 2 minutes
• Add the coarsely ground green peas and mix well.
• Add salt to taste and 1.5 to 2 cups of water. Adjust the consistency as per your preference.
• Add the fried potatoes and bring the curry to a boil.
• Simmer until the green peas are cooked and the curry thickens.
• Garnish with some chopped coriander leaves and serve hot with roti or rice. Enjoy!
