1 cup split moong dal (split yellow gram)
• 4 cups water
• 1/2 tsp turmeric
• 1 tsp salt
• 3 tbsp canola oil
• 1 tsp cumin seeds
• 1 tbsp grated ginger
• 1 tbsp chopped garlic
• 1 serrano or green chili, slit
• 2 tsp ground coriander
• 1/2 tsp fenugreek seeds
• 1/4 tsp red chili powder (optional)
• 2 medium tomatoes, chopped
• 8 oz chopped spinach (fresh or frozen)
• Juice of half a lime
• 2 tbsp butter
• 3 tbsp chopped cilantro

Method:
• Wash and drain the moong dal and add it to a large pot with water, turmeric and salt. Bring to a boil, then lower the heat and simmer partially covered for about 20 minutes, stirring occasionally.
• In a small frying pan, heat oil over medium-high heat and add cumin seeds. When they start to crackle, add ginger, garlic, green chili and sauté for a minute.
• Add coriander, fenugreek and red chili powder (if using) and sauté for another minute, making sure the spices don’t burn.
• Add the onion and spice mixture to the pot with the dal and mix well. Cook for another 10 minutes, stirring occasionally.
• Add lime juice and spinach to the pot and stir. Cook for another few minutes, or until spinach is wilted or heated through.
• Taste the dal for salt and adjust if needed. You can also add more water if you prefer a thinner consistency.
• Stir in butter and cilantro and serve hot with rice or roti.
