Instructions:

Preheat the oven to 325°F (165°C).
In a bowl, mix the graham cracker crumbs, melted butter, and 3 tablespoons of sugar until well combined.
Press the mixture onto the bottom of a 9-inch (23 cm) springform pan. Bake for 10 minutes and let it cool.
In a large bowl, beat the cream cheese until smooth. Add the sugar and vanilla extract and beat until well combined.
Add the eggs, one at a time, and beat until just incorporated.
Add the mango pulp and mix well.

Fold in the mango chunks.
Pour the mixture over the prepared crust and smooth the top.
Bake for 50-60 minutes or until the edges are set and the center still jiggles slightly.
Turn off the oven and let the cheesecake cool in the oven for 30 minutes.

Refrigerate the cheesecake for at least 4 hours or overnight.
